Is there a way to combine pages in a course, so I don’t have to start from scratch? I found a July '19 post which wasn’t much help

Sure. Go to the page you want to be your final page after combination. Then top right hit the Paste button. Go to the Articles tab within the popup and select the Article(s) you want to duplicate in from the other page, and when you’re happy that they are all across, you can remove the other page.
