Hi guys 
Sorry for a n00b question. I’ve enabled several Extensions, but I can’t see them when I click the “+” sign to add Components.
How can I add the to my course?

That’s not really how extensions work. By enabling them you have added them to the course.
There are some extensions - Content Locking, for example - that add additional configuration settings at Page/Article/Block/Component level when they are enabled.
Your best option is to check the documentation for the extension(s) you have enabled by clicking this icon:
