We have a quiz at the end of our courses and for ease of use for the learner I want them to be able to submit them all at once. Is there a way to create an action button or something that will submit multiple MCQs?

There isn’t a feature like this available but the best alternative would be to have all your MCQs to auto-submit.
You can do that by switching the toggle “Auto Submit the Question?”.
If you absolutely need all the answers to be submitted at once, you would need to add some custom code in an iFrame with some embedded content.
