Is there a way to set the default to “0” like you can in the in the Slider Input Component?

Do you mean just the “Slider” Component?
If so, then yes, absolutely possible. You can set the range minimum and the label to both be 0 as seen here:
Ah wait you’re saying the default, as in to start the slider at 0 not at 5…?
Yes that’s an odd one! I’ll report it to the developers and see if it is possible to add that in!
