Is there a way for my MCQ questions to look more like this and if so, how?

Hey Holly,
The line underneath the question text might be a little tricky to achieve. I think you’d have to put the question text in the Block, rather than in the MCQ component itself. Then add a border to just the top of the component. This wouldn’t be good for accessibility though, as having the question text separate from the rest of the MCQ component is confusing for screen readers.
The rest is easy to achieve though. You need to make an Article Style for this component. Remove the background colours from the component item, and also remove any border / drop shadow settings as well.
You would probably want to add a change in colour for the hover / selected / visited states though.
It would be easier to help you with this if we could see how your MCQ currently looks with your current theme settings.

You can add a horizontal line under the question text by using the ‘Insert Horizontal Line’ command from the text editor:
When you change the colors in the Default Color Editors you’re setting the Theme Colors that appear in the color picker here:
So one thing to be aware of is that if you change one of those it will change that color everywhere it’s used within that theme.
Within the theme settings, colors that are set to Theme Colors will have a dotted outline around them:
